Despite the challenges in winemaking posed by the extreme weather conditions of Ara Wines’ location in the Wairau Valley in Marlborough, New Zealand, their winemaking team remains optimistic and dedicated in manufacturing fine wines that display the uncanny natural conditions. Ara Wines’ winemaking philosophy is anchored on three beliefs: (1) to have great wine you must use great fruit, (2) time-tested winemaking techniques and practices should be used along with the latest technology available in order to make the most out of the fruit and terroir, and (3) using sustainable winegrowing practices is a rewarding choice.
The 2012 Ara Resolute Sauvignon Blanc was crafted from grapes that were handpicked from vines planted on a single estate sitting on an ancient river terrace in Marlborough. With an alcohol level of 13%, this wine exhibits intense aromatics added due to wild fermentation. Rich peach notes and lemon thyme flavours combined with a weighted texture dominate the palate that leads to a long and satisfying finish. Drink immediately or wait for five more years to allow it to mature. This drink pairs perfectly with ginger infused Marlborough Salmon with couscous salad.
