The Cockfighter’s Ghost winery is named after the legendary horse that bravely stood its ground until his final mission in the early Hunter Valley exploration in 1835. This horse drowned while carrying his rider across the raging waters of a flooded creek. Cockfighter’s gallant stand until his final moments was honoured by the explorers who were a part of the mission. Several years later, the workers of the bridge across the same stream swore that they witnessed the horse’s ghost, galloping across the countryside with power and might during stormy nights.

This interesting legend enticed the owners of the Cockfighter’s winery to give it this name. This winery’s most fabulous wine series, the Poole’s Rock is a must-try. These wines present excellent single-vineyard wines that truly reflect the rich characters of Hunter Valley.

Poole’s Rock Chardonnay is one of the most popular blends from the collection. It displays a pale lime lemon colour with bright shades of green. Ripe green melon, sweet guava and fragrant notes of wildflower create an exciting bouquet. Intense and sumptuous fruits are complemented by complex mineral structure and smooth vanillin oak to a rich, soft and luxurious finish.

Fresh Chardonnay grapes are picked from the best vineyards in the Estate during the cool of the night to retain maximum freshness and excellent characters of the fruits. The wine is fermented in stainless steel tanks and French oak barrels together with lees while stirring occasionally in order to even out the wine’s texture. Final aging in quality French oak barrels adds a touch of elegance to the wine.

This wine may be enjoyed fresh from release or cellared from six to eight years for optimum enjoyment of matured Chardonnay flavours.
