It was in 1835 in the midst of the Hunter Valley exploration when the iconic horse named Cockfighter, the strongest of the herd, drowned in the turbulent waters while crossing a flooded creek to commence a mission. Years after, the early builders of the bridge across the creek insisted that they can see Cockfighter’s Ghost galloping with might and fury during stormy nights. Till date, people believe that Cockfighter’s Ghost still roams the Hunter Valley vineyards.

The Poole’s Rock collection is a luxurious series of wines that strongly reflectthe rich Hunter Valley tradition and the single vineyard philosophy of Cockfighter’s Ghost Wines. Poole’s Rock presents three single varietal wines that will surely make every occasion a very special one: Chardonnay, Shiraz and Semillon.

High quality Pinot Noir fruits are handpicked from the finest Hunter Valley vineyards and are crushed in whole bunches. After ten days of fermentation, the wine is matured in first class French oak barrels for 10 months to add a touch of elegance and complexity.

The result is a rich Pinot Noir with deep red cherry colour and a fragrant bouquet of blueberry and truffle notes. Intense fruit flavours with subtle characters of milk chocolate and spice are led by the velvety smooth consistency to a sweet, flavourful and delectable finish.

Poole’s Rock Pinot Noir can be enjoyed now or cellared from 8 to 10 years.
