This cuvée is a gorgeous blend of three main vintages of Chardonnay (53%), Pinot Noir (42%) and Pinot Meunier (5%). Crafted using the traditional method, it underwent malolactic fermentation and was further aged on lees for two years. Poured into a glass, it showcases lovely bright green colour with a soft and delicate mousse. On the nose, it exudes aromas of bright citrus, fresh apples, brioche and cream. A sip of the wine reveals crisp apple pie flavours complemented by lime characteristics. This vivacious and intense palate eventually culminates in a lengthy finish. It can be paired with smoked salmon, fish tacos, or even fried mushrooms.

Clover Hill, established in 1991, is one of Australia’s premium sparkling wine producers. To attain the desired elegance, they use the Champagne-like traditional method of producing bubblies. Clover Hill has been twice awarded as ‘Tasmanian Vineyard of the Year’. It has also earned a place in the ‘Australian Sparkling Wine House of Honour’.

Review for Non - Vintage

Keeping to the traditional Champagne trio, it is a blend 53% Chardonnay, 42% Pinot Noir and 5% Pinot Meunier it is also a blend of three vintages. After 2 years on lees there is richness on the nose with plenty of lemon, apple & light nuttiness & bready yeast. It shows satisfying balance with a lip licking sweet fruit finish. With fresh & lively bubbles, it rates high on the foodability scale but is also enjoyable ‘as is’.
