Clean apple and fl oral notes are complexed with fresh cream and bread dough aromas.
The fi ne bubbles provide a creamy texture, while the delicate acidity balances the fresh fruit.
Try with hors d’ourves or oysters.
Dry / Light Bodied
Certain vineyards from the King Valley, Murray Darling and Riverina were identifi ed and harvested in early January. This allowed the fruit to retain its natural acidity important for sparkling wine. The Chardonnay and Pinot are picked in the cool of the night to help retain freshness, with the Pinot handled oxidatively to help lower the red colour pigments.
Both are fermented warm to add complexity. The blend is then run through secondary fermentation in a tank – Charmat method to add the bubbles and creamy texture.
