WINERY INFORMATION
Vineyard
The vineyard consists of a north-facing slope that provides splendid views of Hay River Valley, Wilson Inlet and the hills surrounding Denmark. The immediate outlook on the farm is across a flat of grazing cattle.
Winemaking
Harvesting for the 2016 vintage began in the month of April, following a winter with average rainfall, a warm summer and humid conditions that proved to be challenging but were well-managed. The fruit was crushed immediately after harvest, and fermentation at 26°C was carried out for 8 to 10 days. After this, the wine was basket pressed. French and Hungarian oak were used to mature the wine for 18 months.
