He believed that Dwellingup could be cultivated into one of the premier wine regions of Australia, producing high-quality and flavoursome wines for the local as well as international wine markets. Produced using fruit sourced from lush vineyards in Wilyabrup as well as Jindong, Emmetts Crossing Cabernet Sauvignon 2007 is a pale yellow wine with light green hues along the edges. The luscious bouquet and complex palate structure of the wine pack notes and characters of juicy mulberry and sweet chocolate. The minty nuances in the Cabernet grapes intensify and round out the front palate, intermixing with the delicate fruit flavours and strong oak structure to end in a lingering and persistent finale. Meatballs, BBQ lamb ribs and grilled steaks taste excellent with this full-flavoured red wine.
