THE WINEMAKING Both the Chardonnay and Pinot Noir were initially cool fermented at around 14°C in stainless steel tanks. After the secondary fermentation took place the wine was matured on yeast lees to increase texture and palate structure.
THE SPARKLING WINES Pale straw in colour, this premium Cuvée Brut Sparkling Chardonnay Pinot Noir, has fresh aromas of citrus with hints of pear, apple and brioche. The palate is rich, yet refreshing, with white peach, melon and green apple characters with hints of almond and biscuit flavours all supported by a persistent fine bead and zesty lime finish. This sparkling is an ideal aperitif, although it can be enjoyed any time of the day.
