Founded more than 150 years ago, Corryton Park is situated at the southern corner of Barossa Valley near Mount Crawford. Grant Burge had loved this magnificent property since he was a young boy, and finally purchased it in the year 1999 with the vision of establishing a splendid Cabernet Sauvignon vineyard. This estate has since become an unparalleled site in the Barossa Valley wine region. It is among the highest and coolest vineyard properties in Barossa Valley, providing excellent conditions for the growth and cultivation of top notch Cabernet Sauvignon grapes exhibiting remarkable flavours, balance and finesse.
Throughout the growing season of the 2012 vintage, the region experienced perfect weather conditions for the growth of high quality fruit. Good winter rains were followed by a pleasant spring having mild and dry weather during the day and cool, breezy weather at night. The fruit was picked in tiny, individual batches which were all crushed and fermented separately in order to draw attention to the natural variations between different clonal plantings and microclimates witnessed across the vineyard. The process of primary fermentation was followed by elevating the wines and keeping selected parcels on skins for approximately 30 days to undergo extended maceration. After this phase, the wine was pressed, racked and matured in French oak hogsheads for an estimated time period of 18 months.
This exquisite wine shows a deep plum red hue, exhibiting elegant fragrances of blackcurrant, black cherry, mint, dark chocolate, cinnamon and woody spices. The intensely flavoured palate contains ripe blackcurrant flavours balanced by subtle nuances of cedar while the smooth and rounded mid palate leads up to a lengthy, refreshing and tannin filled climax. This marvellous Cabernet Sauvignon has the potential to age beautifully over a decade. Serve it with fillet steaks, ribeye steaks or mushroom pizzas to experience the true flavours and character depth of this delicious red wine.
