A significant portion spends time on oak before this wine undergoes secondary ferment in bottles and spends 30 months on lees giving remarkable balance and poise for a multi vintage sparkling wine. The palate expresses an elegant but powerful character, showcasing flavours of grapefruit pith, lemon curd, natural yoghurt and fresh sourdough. Balance is achieved at a low dosage which expresses the purity of Chardonnay with classic citrus and saline characters.
