WHY DO WE LIKE THIS WINE

VINEYARD: Fruit is sourced from two sub regions with in the Clare Valley. The organically certified 'Doctor's block' is located in the polish Hill River Region, a superior cool climate vineyard which is dry grown and low yielding. The Armagh vineyard produces fruit from 50 year old dry grown vines. The sandy loam soils are made up of sand, silt and clay which support the root structure of the vine and influences the drainage levels and the amount of minerals and nutrients that the vine is exposed to in turn producing good quality fruit. VINIFICATION: Small batch ferment in 2 and 4 tonne fermenters over a 12 day period using natural yeast and hand plunged. The wine was left on skins for 15 days to enhance tannin complexity maximising flavour and length. Pressed to tank then racked to oak after 4 days (25% new French oak; 75% seasoned oak) for a total of 2 years. COLOUR: Deep, rich ruby red with purple hues BOUQUET: Perfumed with blackcurrant cassis and a hint of cedar and spice from premium French oak. PALATE: The contrasting influences of the two sub regions produce a great synergy, with this comes a balanced elegant wine. It displays long fine grain tannins, giving it real texture and gorgeous chalkiness. The depth of rich berry fruit concentration and the length of natural acidity are generous and appealing. FOOD MATCH: A friendly wine, try with aged beef, spicy dishes or a hot curry
