VINEYARD: David and Sue Cherry (nee O'Leary) Adelaide Hills planted this vineyard in 1990. The Adelaide Hills is arguably one of the best regions in Australia for Sauvignon Blanc, Chardonnay, and Pinot Noir. The weather patterns, influenced by the Mt Lofty Ranges seem to draw the best from these varieties. The cool climate dictates a long and even ripening, maximising varietal character and intensity of flavour. The O'Leary family vineyard at Oakbank faces north-east and is quite high on a gentle sloping hill. The soils are gravelly and well drained. VINIFICATION: Fruit is harvested in the cool of the night. All batches are kept separately in stainless steel tanks. The fruit is de- stemmed and crushed then gently pressed, resulting in a fine free-run cut and a pressings component. These are handled separately. The free-run juice is chilled to preserve the vineyard expression and purity of fruit. Once the juice has settled, it is racked off solids and seeded with yeast. A cool, temperature controlled fermentation is carried out over 10-14 days. The wine is chilled to 5 degrees celsius and filtered prior to bottling. COLOUR: Pale straw green tinge BOUQUET: Purity of fruit with lifted tropical fruits of passionfruit and gooseberry. PALATE: Vibrant, bright and zippy tropical fruits displaying textbook Sauvignon Blanc flavours. FOOD MATCH: Excellent companion to Barramundi and spicy Asian cuisine
