The fruit used to craft Phoenix Cabernet was harvested and barrel aged in French oak, followed by maturation in stainless steel for 6 months. The resulting wine displays a deep garnet colour accompanied by a purple rim. A swirl of the glass presents dark berry fruit and smoky oak aromas. The palate is supple and smooth, filled with flavours of blackcurrant, oak and bay leaves. Fine tannins integrate with the palate to end the wine in a bright and persistent finish. Penley Estate is a family owned wine business, established by Ang and Bec Tolley in 1988. The company specialises in the production of full bodied and enticing Coonawarra wines. These delicious wines are crafted under the supervision of accomplished winemakers - Kate Goodman and Matt Tilby. This enticing Pheonix Cabernet was the first wine produced under the Mythology Series. It received a Gold Medal at the Adelaide Wine Show in 1989.
