: No. 5 is mostly Cabernet Sauvignon with 8% Merlot . This high quality wine highlights the impressive relationship between these varieties and the Orange region. Our Cab Sauv displays intense bright reds with a small purple hue. The aroma shows bright varietal black berry fruit characters with subtle cigar box oak. The intensity of the Cabernet Sauvignon’s fruit dominates at this stage and provides ongoing flavours. Providing the wine is well cellared, it will further develop, intensify and gain complexity over an extremely long period - up to 50 years.

WINERY INFORMATION:

Grapes are transferred to the winery, and then steams are removed before clean berries are transferred to the fermenters. As there is no yeast added we rely on the natural yeast in the vineyard. Fermentation starts for 3­5 days, the skins are pumped over for about 5 mins per day, which allows a full extraction of colour and flavour, the wine then remains on skins for 25-30 days, before pressings are transferred to the barrels. The wine was racked to 100% new French oak barrels.
