Winery Overview
Nestled in the rolling foothills of Mount Canobolas, Angullong Wines is set within the cool-climate wine region of Orange in New South Wales. This elevated and picturesque site, approximately 350km west of Sydney, is known for its ancient volcanic soils and pristine growing conditions. The Fossil Hill Paddock Blend, crafted by winemaker Jeff Byrne, reflects the thoughtful vineyard management and winemaking precision that define the estate's characterful offerings.
Vintage Conditions
The 2021 vintage was shaped by cool evening temperatures and a steady ripening season, allowing for the preservation of vibrant acidity and the development of expressive aromatics. The elevated terroir and mineral-rich soils provided ideal conditions for both Marsanne and Viognier to thrive, contributing to a wine of texture, freshness, and finesse.
Winemaking Process
Harvested in the cool of night using a state-of-the-art selective process harvester, the fruit was gently handled to retain whole berries. Fermentation took place in a mix of new and seasoned French oak puncheons, where the wine remained on lees with fortnightly stirring to build texture and complexity. Minimal fining ensures the purity of fruit and preservation of the wine’s natural structure.
Tasting Notes
Pale straw in colour with a youthful green tinge, this wine opens with a lifted bouquet of citrus blossom, melon, stone fruit, and a whisper of spice. The palate is generous yet balanced, delivering notes of white peach, apricot, and honeysuckle with a silky mouthfeel. Fresh acidity lends drive and structure, while the lees influence adds a subtle savoury depth, making this an elegant and versatile white blend.
Food Pairings
This modern Marsanne-Viognier blend pairs seamlessly with a wide range of dishes. Serve it with grilled seafood, creamy chicken dishes, or roasted vegetable tarts. Its weight and texture also make it a lovely companion to pork loin, mild curries, or soft cheeses such as brie and triple cream
