Vintage Notes
The 2021 season in Great Southern unfolded beautifully. After a cool, wet winter, the region moved into a dry and warm summer that lingered into autumn. These conditions created an ideal ripening window, allowing the Shiraz to develop depth of flavour, lifted aromatics and finely tuned tannins.

Winemaking
The fruit was picked and chilled before a gentle crush, then left to cold soak for three days. Fermentation kicked off naturally in small open tanks, with twice-daily pump-overs to draw out flavour and structure. The temperature was kept steady during the peak of fermentation, before gradually warming as the process wrapped up. Once pressed, the wine was transferred to French oak for malolactic fermentation and aged for 15 months—30% in new barrels, the rest in seasoned oak—to bring complexity and finesse without overshadowing the fruit.

Tasting Notes
In the glass, this Shiraz shows deep crimson with a soft brick-red edge. Aromas of dark berry, cherry and spice are immediate and inviting. The palate is smooth and full-bodied, carrying blackcurrant and gentle oak spice through to a long, balanced finish. The tannins are fine and well-integrated, giving the wine both structure and a sense of ease.

Food Pairing
This wine is well suited to rich, savoury dishes—slow-cooked meats, roast lamb, or earthy, herb-laced vegetables. It also pairs comfortably with a variety of hard cheeses and chargrilled fare.
