Vintage Information
The 2022 vintage in Tasmania experienced favourable conditions, with a cool growing season that allowed for slow, even ripening of the Viognier grapes. This resulted in fruit with concentrated flavours and balanced acidity, ideal for producing aromatic and expressive wines. 

Winemaking Process
The Viognier grapes were handpicked at optimal ripeness to preserve their delicate aromatics. After gentle pressing, the juice underwent fermentation in stainless steel tanks to retain the fresh fruit characters. The wine was then aged on lees for several months to enhance its texture and complexity before bottling. 

Tasting Notes
This Viognier captures the aromatic intensity of the grape, offering a bouquet of stone fruits like peach and apricot, complemented by floral notes of jasmine and a hint of white pepper. The medium-bodied palate presents flavours of citrus, tangerine, and a touch of honeyed sweetness, balanced by crisp acidity and an oily texture.  

Food Pairing
Thanks to its aromatic lift and textural richness, this Viognier is wonderfully suited to a wide range of dishes. It pairs beautifully with seafood such as prawns or scallops, enhancing their natural sweetness, and complements the spicy, fragrant flavours of Thai and Indian curries. It also works well with roast chicken and is a charming match for creamy soft cheeses like brie or camembert.
