Premium quality Chardonnay grapes from McLaren Vale were picked in the cool of the night, and cold fermented in stainless steel tanks with aromatic yeasts. After completion of primary fermentation, the juice is blended and lees stirred once a week for a period of 8 months. The result is a pale green-hued wine giving off aromas of stone fruit, citrus blossom and green papayas from the nose, with underlying hints of spice, oatmeal and freshly cut hay. Flavours of fleshy peach, syrupy fig and yellow nectarine are abundant in the palate, complemented by nuances of guava, kiwi and passionfruit curd creaminess. The mid-palate is smooth and textured, teeming with toasted hazelnut, butterscotch and spice notes that are enhanced by the mealy complexity of the palate structure. Light phenolics and cleansing acidity combine with the fruit characters to give a zingy and persistent ruby grapefruit finale. Chardonnay wines taste great with foods like pasta, risottos, creamy vegetable soups, steamed or grilled fish, and lightly cooked shellfish.
