Colour Pale colour of onion skin and copper. Aroma On the nose there are recognisable SOS characters of cantaloupe skin along with aromas of blueberries, plum, bay leaf and earth. Palate The fruit character brings a cassis juiciness into the mid palate which is soft and textured with hints of blueberry and plum fruit. The wine finishes bone dry with not much acid.
WINERY INFORMATION
Vineyard
The majority of the wine was produced from Pinot Noir fruit harvested from the Coldstream area.
Winemaking
In a departure of winemaking procedure we took a small sagné from our forthcoming Sangiovese and fermented it in barrel. Meanwhile we pressed a whole lot of Merlot and Cabernet Sauvignon for the vast majority of the wine which was then transferred to barrel for fermentation. After a slow ferment and full malo the wine was racked before being bottled with only minimal sulphur additions.
