Winemaking: Grapes were selected from the best parcels of Shiraz and harvested over a 2 week period. The fruit was warm fermented with twice daily maceration of skins to assist in colour and flavour extraction.
To retain the full juicy fruit palate, these wines had minimal oak maturation (6 months only on French oak).
Several parcels were then blended to achieve best mix of fruit, tannin and palate weight.
Appearance: Crimson red with purple edges.
Aroma: Red berry, plum and raisin characters.
Palate: Juicy fruit forward mid palate, balanced with subtle integrated oak, fine ripe tannins. Coming from a cooler vintage, the palate has a finely structured acid backbone complementing the length of the wine.
Serve with: A perfect accompaniment to roast or barbecued red meats, casseroles, hard & blue cheese.
