The Pinot Noir vintage of 2016 received 40 to 60 mm of rainfall in a moderate to warm spring season. Vineyards in Yarra Glen, Dixon’s Creek and Coldstream were searched thoroughly to harvest the best parcels of grapes. Open top fermenters were used to ferment the wine, while yeast selection helped enhance the flavour profile, structure and mouthfeel. After maturation in French oak and stainless steel tanks, the wine was finally coarse filtered and estate bottled. Sporting an alcohol level of 12.5%, the wine displays a pale crimson hue. Aromas of beetroot, plum, cinnamon and raspberry flow from its luscious nose, while the complex and juicy palate features notes of spice, toast, dark cherry, coffee and red plum. This wine has a cellaring potential of about 4 to 6 years, best served when paired with game meats, pasta, salmon or chicken.
