The Tempus Two Pewter Sparkling Pinot Chardonnay 2011 is a magnificent blend of 57% Pinot Noir grapes with 43% Chardonnay fruit. Displaying an alcohol level of 11.5%, this flagship blend from winemaker Andrew Duff was aged on yeast lees for about 18 months prior to disgorging. The result is a yellow hued wine presenting light brown highlights throughout. Pleasing fragrances of citrus and stone fruits flow off the bouquet, mixing with creamy and biscuity nuances. The complex palate shows a fine bead, filled with juicy flavours of white peach and apple complemented by a subtle creaminess. Suitable for consumption upon release, this wine can be cellared for 5 to 10 years, whence it would enhance depth and elegance. It can be served as an aperitif, or be paired with food items such as ceviche, pate and crispbread.
