Winery Background
The Deen Vat Series honours Deen De Bortoli, whose passion and commitment shaped the family winery into one of Australia’s most respected producers. Vat 7 Chardonnay reflects his belief in crafting wines of personality and balance.

Vineyards and Vintage Conditions
Grapes are sourced from the King Valley, a cool-climate region in Victoria known for producing elegant, finely structured Chardonnays. The 2022 vintage enjoyed mild conditions, allowing a gradual ripening process that enhanced flavour development and natural acidity.

Winemaking Process
A portion of the wine was fermented and matured in French oak to build complexity, while the remainder was kept in stainless steel to preserve freshness. Lees stirring added a creamy texture and depth to the palate.

Tasting Notes
Pale gold in colour, the nose offers aromas of white peach, citrus blossom, and subtle vanilla spice. The palate is layered with flavours of nectarine, ripe melon, and a hint of toasted almond, finishing with a clean, refreshing acidity.

Food Pairing
A versatile companion to roast chicken, creamy pasta dishes, seared scallops, or a soft, buttery brie.

Story Behind the Wine
Vat 7 takes its name from one of the original vessels in which Deen De Bortoli crafted early vintages, symbolizing tradition and craftsmanship carried forward to each new release.
