La Bise Wines, named for 'the kiss' in French, represents a venture beyond the Barossa Valley, with each vintage seeking out Adelaide Hills vineyards that offer fruit capable of expressing the unique characteristics of the site. This revitalises vineyards, providing them with "the kiss of life," and the wines under the La Bise label testifying the transformative power of this careful, loving attention.
The 94 points La Bise Adelaide Hills Rosé 2021 showcases grapes from the oldest Grenache vines in the Adelaide Hills, aged 35 years, known for their ideal performance in rosé production. To these Grenache grapes, approximately 20% Pinot Gris from the same vineyard is added so as to give a rich lusciousness to the wine's mid-palate. The winemaking process was developed with the guidance of a mentor vigneron from Provence, thereby capturing the essence of the Provencal style. This includes techniques like cold harvest and stabilisation before fermentation, utilising juice lees to enhance power and texture, and maintaining a cooler fermentation process. The result is a rosé that balances texture with a tension between phenolics and acidity and thus embodies the distinctive style and vision of the wine.
