These wines were crafted under the guidance of skilled winemaker Corey Ryan, using small batch winemaking techniques. The company follows the United States guidelines of using minimal preservatives to produce these food-friendly wines.
TASTING NOTES
The premium fruit used to produce Speak No Evil Shiraz was handpicked, destemmed, and fermented in open fermenters. Post maturation in French oak for 10 months, the wine shows a vivid red colour lined by purple hues. A whiff of the wine reveals lifted scents of blood plums and ripe blackberries. The plush palate contains enticing flavours of blackcurrants, dark plums and smoked spices. Fine, savoury tannins drive the dense palate to a rich and lengthy finish. Made for consumption upon release, this mouth-watering Shiraz has the potential to be cellared for a decade. Suggested food pairings include pepper steak, beef tagliata with wilted rocket, and grilled lamb chops with pesto.
