Poole’s Rock Chardonnay – Green Melon and Guava Salad

The Cockfighter’s Ghost winery owes its name to the legendary horse that is known for standing his ground and not giving in until his final mission was completed in the early exploration days of the Hunter Valley in the year 1835. Cockfighter drowned while carrying his rider across a flooded creek. He was honoured by the explorers for his gallant and noble services. Years later, workers working on a bridge across the same creek swore that the horse’s ghost can be seen running across the countryside during stormy nights.
This enticing legend convinced the owners of the winery to name it after the horse. The Poole’s Rock series is the most reputed wine range of the Cockfighter’s Ghost winery. The Poole’s Rock Chardonnay is among the most famous blends of this range. It is pale lime - yellow in colour along with vibrant shades of green. Sweet fragrances of wildflowers, green melons and guavas fill up the bouquet. The palate comprises of intense fruity flavours of ripe melons and juicy guavas that are complemented by a complex mineral structure. Notes of smooth vanillin oak lead to a delicate and luxurious finale.
To craft this wine, ripe Chardonnay grapes are carefully selected from the best vineyards on the estate during the cool hours of the night so that the freshness and flavour of the fruit can be retained. The juice is extracted and fermented in stainless steel tanks and French oak barrels with lees.
The wine is fit for consumption fresh from release or can be cellared for 6 to 8 years.
