Tempus Two, which translates to ‘second time’ from Latin, was a rebirth of its predecessor, the Hermitage Road. The term ‘hermitage’ was originally used to describe the protected pristine wine region in the Rhone Valley. Lately, Tempus Two released a pair of 2014 vintage Sparkling Wines from the Varietal Series. Premium quality fruits are sourced from the vineyards in the Limestone Coast region in South Australia. These wines are packed with refreshing fruit characters that are perfectly balanced by velvety smooth tannins and fine acidity.

Tempus Two Blanc de Blanc is made from selected Chardonnay grapes, pressed in whole bunches to delicately release the concentrated juices. After the fermentation process, the wine is allowed to mature on light yeast lees to enhance the creamy mouth feel. The wine features a fragrant bouquet of refreshing fruit salad highlighted by passion fruit and green apple. Characters of juicy peach, crisp green apple and luscious passion fruit build the palate of this wine. The delightful sweetness is balanced by zesty notes of citrus fruits to a soft and fine bubbly finish.

Tempus Two Sparkling Rose is made from sweet Chardonnay and fruity Pinot Noir that are perfectly blended to create an exciting fusion of flavours while preserving the distinct individuality of the two varietals. After two weeks of cold fermentation, the wine was allowed to mature on light lees to improve the consistency. Bright characters of succulent strawberries and red cherries create a delightful body of sweetness, while green apple and zesty citrus characters provide a good balance of acidity. The palate finishes on refreshing fine beads. Red and summer berry aromas build the nose of Tempus Two Sparkling Rose.
