Mimosa Three Ways Because It's Summer!

1. CITRUS OVERDOSE MIMOSAS

INGREDIENTS

  • 1 x 750ml bottle sparkling wine (Cuvée)
  • 1 blood orange - chilled
  • 2 oranges - chilled

  • For garnishing:
  • Evenly cut lime slices
  • Wedges of orange

METHOD

  1. Halve the oranges and extract their juice using a citrus juicer. Do the same with the blood orange. Do not mix the juices.
  2. Garnish each glass with a lime slice, slitting it half the way and placing on the glass rim. Also place an orange wedge on each of the glass’ rim, flesh side down.
  3. Equally divide the blood orange juice among the glasses, then top with orange juice. Finally, carefully pour the bubbly. Serve immediately.

2. FRUIT PUNCH MIMOSAS

INGREDIENTS

  • 1 x 750ml bottle sparkling wine (Cuvée)
  • 1 cup/225ml pineapple juice - chilled
  • 1 cup/225ml orange juice - chilled
  • 3 tbsp/45ml grenadine syrup

  • For garnishing:
  • Evenly cut orange slices or orange twists (Orange twists are made with fruit peel.)

METHOD

  1. 1. Equally divide the grenadine syrup among 6 champagne flutes and swirl a little to coat the bottom and a bit of the sides.
  2. 2. Garnish each glass with an orange slice, slitting it half way and placing on the rim, or with an orange twist.
  3. 3. Slowly pour the pineapple juice, followed by the orange juice in all of the glasses, one by one. Ensure that only one-third of each glass is filled. Carefully top with the bubbly. Serve immediately.

3. CRANBERRY MIMOSAS

INGREDIENTS

  • 1 x 750ml bottle extra-brut/ brut cuvée
  • 2 cups/450ml cranberry juice - chilled

  • For presentation & garnishing:
  • ½ cup/50g frozen cranberries - optional
  • 2 tbsp/30ml caster sugar/ powdered sugar
  • A piece of lemon or lime

METHOD

  1. 1. Pour the sugar onto a plate. Then, rub lemon over the rim of 6 champagne flutes and invert on the sugar, one by one. Shake off the excess sugar.
  2. 2. Equally divide the cranberry juice among all the glasses and carefully top with the bubbly. Float some frozen cranberries in each glass, if using, and serve immediately.

NOTE

  1. 1. It is important that the juice is chilled prior to starting. Never use ice - it dilutes the drink.
  2. 2. Frozen cranberries will help keep the drink chilled, unlike fresh ones.
