Types of Rum Explained
White Rum
Light, clear and typically unaged or only briefly aged before filtering removes any colour. White rum is the classic base for cocktails like mojitos and daiquiris, where its clean, relatively neutral profile lets other ingredients lead.
Gold and Aged Rum
Aged in oak barrels for a period of time, gold rum picks up colour and flavour from the wood, developing notes of caramel, vanilla and spice. It sits between white rum's simplicity and dark rum's intensity, versatile enough for mixing or sipping depending on the bottle.
Dark Rum
Aged for longer, often in heavily charred barrels, dark rum is richer and more intense, with deep notes of molasses, dried fruit, toffee and sometimes smoke. It's generally built for sipping neat or on ice, though it also has a place in richer cocktails.
Spiced Rum
Rum infused with spices, vanilla, cinnamon and sometimes citrus among the common additions. It's typically built for mixing and easy drinking rather than contemplative sipping, and it's the most approachable entry point if you're new to rum generally.
What Is Agricole Rum?
Agricole rum is where our range really sets itself apart. Unlike most rum, which is made from molasses, a byproduct of sugar refining, agricole rum is distilled directly from fresh sugarcane juice. That difference matters: agricole tends to be grassier, more vegetal and more overtly sugarcane in character, with a cleaner, more distinctive profile than molasses-based rum. It's most closely associated with the French Caribbean, particularly Martinique, where strict AOC rules govern production much like wine appellations do in France. If you've only ever had molasses-based rum, agricole is genuinely a different drinking experience, and it's a large part of what makes this collection worth exploring properly rather than skimming past.
Mixing vs. Sipping
White and light rum are built for cocktails, mojitos, daiquiris and similar drinks where the spirit needs to blend cleanly with citrus, sugar and mixers rather than dominate. Aged and dark rum, agricole vieux included, are generally at their best drunk neat or over a single large ice cube, where you can actually taste the barrel ageing, the fruit and the spice character that years in oak have built up. Mixing a genuinely old, expensive agricole vieux into a cocktail is a bit like using a fine aged whisky in a highball, technically fine, but you're masking most of what makes the bottle worth its price.
