What Is Tequila?

Tequila is a distilled Mexican spirit made from the blue Weber agave plant, produced under strict regulations that limit genuine tequila to Jalisco and a handful of neighbouring states. Production runs from cooking and fermenting the agave through to distillation, with some tequila bottled young and other batches aged in oak to build colour and complexity.

How Is Tequila Made?

Blue Weber agave plants take years to mature before harvest. Once picked, the core (piña) is cooked to convert its starches into fermentable sugars, then crushed to extract the juice. That juice is fermented, distilled typically twice and either bottled straight away or aged in oak barrels, depending on the style being made.

Types of Tequila

Blanco / Silver Tequila

Reposado Tequila

Gold / Joven Tequila

What Does 100% Agave Tequila Mean?

"100% agave" means the tequila is distilled entirely from blue Weber agave sugars, rather than blending in other permitted sugars (a mixto tequila). It's a genuine quality marker worth knowing, though it doesn't automatically mean a specific bottle is superior plenty of well-regarded tequila brands built their reputation on consistent, well-made 100% agave production, and it's worth checking individual bottles for this labelling.

Where Is Tequila Made?

By law, tequila can only be made in Mexico, mainly around Jalisco. Within Jalisco, style often varies by sub-region.

Highland Tequila

Highland (Los Altos) agave often produces fruitier, more floral tequila with a perceived sweetness.

Lowland Tequila

Lowland tequila often leans earthier and more vegetal, with a peppery, agave-forward character.
