Vineyards and Vintage Conditions

Sourced from cool-climate vineyards in Victoria’s Yarra Valley. The region’s altitude and mild conditions allow for slow ripening, preserving crisp acidity and delicate fruit flavours ideal for sparkling wine production.

Winemaking Process

A blend of classic white varieties, the base wines were fermented separately, then blended and re-fermented using the Charmat method. Extended time on lees enhances texture and adds complexity before bottling under pressure.

Tasting Notes

Pale straw with fine bubbles. Fragrant aromas of citrus blossom, green apple and hints of brioche. The palate is crisp and refreshing, with lemon zest, white peach and a soft, creamy mousse leading to a lively finish.
