WINERY INFORMATION
Chardonnay grapes were machine harvested in the cool hours of the morning and further chilled before pressing. Juice was cold-settled and racked into stainless steel tanks (75%) and French Oak barrels (25%) for fermentation. Fermentation was kept between 14 °C and 16 °C to retain natural aromas and fruit characters. Post alcoholic fermentation, the wine was lees stirred weekly until the balance between the primary fruit and yeast lees was achieved. The wine was blended and fined with isinglass and filtered before bottling.
TASTING NOTES
Bright straw colour. Aromas of pears, citrus and nougat with hints of flintiness. The palate has flavours of fresh citrus and figs and hints of nuttiness on a zesty finish. Pair with Baked dhufish, cauliflower with lemon thyme butter.
