WINERY INFORMATION:

Picked from vineyards across Western Australia, the Cabernet Sauvignon grapes used to craft this elegant wine expressed rich varietal as well as regional characters. Fruit for this wine was hand harvested, hand sorted and finely crushed prior to being subjected to fermentation in small open-top fermenters. The individual ferments obtained were exposed to indigenous yeast followed by an 18-month maturation period in new as well as one-year-old French oak barrels. Finally, the wine was assessed, blended, fined and bottled with as minimal filtration as possible.

TASTING NOTES:

Houghton Cabernet Icons Jack Mann Cabernet Sauvignon is opaque in nature, featuring a dense purple-red hue with vibrant scarlet hues intertwined throughout the wine. Blissful fragrances of dark bramble fruits, dark chocolate and cassis flow from the gifted bouquet, accompanied by soft hints of wild mint, dried tobacco leaf, vanilla and cedar oak characters. The fruit has driven and intense palate contains scrumptious layers of blackberry, gum leaf, tobacco and dark chocolate. With a firm and grainy tannin structure providing finesse and power to the wine, it ends in a lengthy and persistent climax. Serving barbecued beef ribs, meatballs and roasted duck cuisines with this magnificent wine would surely prove delightful!
