WINERY INFORMATION

Paulett Wines is a family owned and operated wine company, founded by skilled winemaker Neil Paulett. The company owns a total of 147 hectares of vineyards, with more 25ha of vines under plantation. Neil completed his graduation in Oenology from Roseworthy in 1971. After acquiring first-hand winemaking experiences from Penfolds Wines in Sydney and Rosemount in Hunter Valley, Neil bought a property to plant his vines in 1983.  

TASTING NOTES

Trillians Sparkling Red is a stylish blend of 58% Shiraz grapes with 18.3% Merlot, 12% Cabernet Sauvignon and 11.7% Malbec grapes. Post-maturation in French and American oak for 24 months, the resulting wine presents a dark ruby colour. A whiff of the wine reveals mesmerising aromas of juicy plum and savoury notes. This dazzling Sparkling Red is juicy on the palate, brimming with elegant flavours of berries, plums and spice. The finish is delicious and satisfying. With the potential to be cellared for five years, this beautiful red blend can also be relished immediately upon release. It tastes excellent served with roast turkey, plum pudding and pates or as an aperitif.
