WINERY INFORMATION
Settled among the rich rolling hills of the famed Ferguson Valley is the Willow Bridge Estate winery founded by Jeff and Vicki Dewar in 1996. Their 60-hectare vineyard is planted with over 10 different varieties of grapes. In 2000, their first vintage wine was released, which was well-received by the public and gained them prominence in Australia as well as abroad. With an annual crush of about 450 tonnes, they are able to produce approximately 18,000 cases per year.
TASTING NOTES
The descriptor of Fumé (French word for smoked) distinguishes this wine from the easy fruity styles of Sauvignon Blanc and its usual blends. It is a fine, light and fresh wine with a creamy texture, which is what sets this style apart from the rest. It is a pale straw in colour with hints of green. The bouquet is loaded with tropical fruits, lychees, musk, beeswax, lemon pith, wood smoke and floral hints. A cool acidity balances the rich texture with slight almond flavours and draws out the length on the palate, making for a long and cleansing finish. An additional four-year cellaring is a rewarding option. Some easy-going foods with this wine are ham, roast dishes, seared salmon carpaccio, seafood and Kedgeree, a mildly-spiced Anglo-Indian dish.
