The Pawn is a spirited, artisanal wine label helmed by Viticulturist and Winemaker Tom Keelan in the cool-climate Adelaide Hills. The project was born from the desire to champion small-batch wines and lesser-known grape varieties—crafted with care from select vineyard parcels.

Vineyards and Vintage Conditions
The 2023 Chardonnay is sourced from premium Adelaide Hills sites such as Macclesfield and Lenswood. These cool, elevated vineyards deliver vibrant natural acidity and aromatic clarity—ideal conditions for crafting elegant and expressive Chardonnay.

Winemaking Process
A blend of wild yeast and traditional barrel fermentation contributes complexity. The wine was matured in French oak for ten months, with bâtonnage stirring to enhance mouthfeel and texture.

Tasting Notes
The nose reveals nectarine, white peach, and melon framed by roasted hazelnut and oak spice, with a faint undercurrent of ginger and pink musk candy. On the palate, citrus notes, lemon curd, and almond meal emerge with balance and layered complexity.
