It was the year 1972 when Water Wheel Wines was finally recognized as one of the most prestigious wineries in the Bendigo region. The property was acquired by the famous Cumming family in 1989 and they introduced Water Wheel to a whole new world of winemaking techniques and technologies. The estate covers about 300 acres of well – maintained vineyards that yield rich, high – quality fruit displaying exquisite characters that every wine – lover craves for.
Modern and reliable winegrowing techniques that the Water Wheel winery has enforced include hedge trellising, limiting the number of buds per vine to 20, ideal vine spacing and monitoring red clay soil with fragments of limestone.
Their most reputed and beloved wine is the Water Wheel Bendigo Shiraz. To create this elegant wine, freshly – harvested grapes are quickly transported to the winery and subjected to malolactic fermentation as well as maturation in new, lightly – seasoned American oak hogsheads. 9 to 12 months later, this delicious and marvelous wine is ready to be bottled and sold.
The wine is bright ruby – red in colour. Fragrances of dark fruits and spices flow around the bouquet while the palate displays rich characters of red and dark berries coupled with hints of oak and vanilla pods. Smooth and silky tannins lead to a lingering and exciting finish.
The Water Wheel Bendigo Shiraz tastes best when served chilled with dishes like creamy red sauce pasta, barbecued ribs and meat pizzas. It can be enjoyed young and fresh or be cellared for a few years to achieve a more integrated Shiraz structure.
