The greatness of Water Wheel wines starts from preparing a well-structured vineyard. The rich soil is deep-ripped before planting the vines. The parcel of land is used efficiently to prevent crowding and to maximize the absorption of the nutrients from the environment. Only 20 buds are planted in every vine and each plant is spaced at least one meter apart. To get an efficient exposure to sunlight and achieve optimum ripeness, a special technique is applied to the vines called “hedge trellising”.

Water Wheel Cabernet Sauvignon

In a cycle of four years, the vineyards are cane pruned for one year followed by spur pruning for three years. Premium quality grapes are planted on heavy clay soil with traces of limestone before harvesting the fruits with utmost care. The grape extracts are fermented in steel tanks at a controlled temperature range of 20 to 22 degrees Celsius. The wine is then matured in fresh American oak barrels imported from Europe.

The 2012 Water Wheel Bendigo Cabernet Sauvignon is one of the most excellent vintages from the winery. It can be identified by its bright ruby colour and slight hues of red. Lifted mint and berry characters define the bouquet of this wine. This rich and full-bodied wine presents an exciting palate of intense berries and striking mint characters. Subtle notes of French oak balance the structure of the wine and lead the palate to a flavourful and intense finish.

This wine can be consumed young but a medium-term cellaring will reward to fully integrated Cabernet Sauvignon characters. This wine is best enjoyed with slowly roasted lamb or barbecued ribs.
