The winery takes its name from its origins. The vineyard was established in 1973 on a large dairy farm in Wilyabrup, and the earliest wines were made in a hay shed that stood on a hill overlooking the farm's pastures. When Liz and Barry Morrison purchased the property in 1989 and renamed it from Sussex Vale to Hay Shed Hill, they chose a name that honoured that original, unpretentious beginning.
