Winery Background

Ashbrook Estate, established in 1975, is one of the pioneering family-owned wineries of Margaret River. Known for meticulous vineyard management and hand-crafted winemaking, they produce elegant, site-expressive wines with a loyal following in Australia and abroad.

Vineyards and Vintage Conditions

The 2020 vintage was defined by warm, dry conditions and low yields, resulting in small berries with intense flavour concentration. Estate-grown Cabernet Sauvignon from mature vines rooted in gravelly loam soils delivered exceptional ripeness, colour, and tannin structure.

Winemaking Process

Fruit was hand-picked at optimum maturity and destemmed into small open fermenters. Fermentation took place over 10–14 days on skins, with gentle hand-plunging for flavour and colour extraction. The wine matured for 18 months in a mix of new and seasoned French oak barriques before being bottled without fining.

Tasting Notes

Deep ruby colour with aromas of cassis, black plum, bay leaf, and subtle cedar spice. The palate is full-bodied and structured, layered with dark berry fruit, fine-grained tannins, and a long, savoury finish.

Food Pairing

Pairs beautifully with roast lamb, beef fillet, or aged cheddar.
