Ashbrook Estate, established in 1975, is one of Margaret River’s pioneering family-owned wineries. Renowned for crafting wines exclusively from estate-grown fruit, Ashbrook focuses on small-batch production that highlights the purity and elegance of the region’s terroir. Their Reserve Cabernet Sauvignon represents the pinnacle of their red winemaking.

Vineyards and Vintage Conditions

The 2017 vintage in Margaret River experienced a cool, late-ripening season with steady rainfall early, followed by a long, mild autumn. These conditions produced Cabernet Sauvignon grapes with exceptional aromatics, fine tannins, and balanced natural acidity. All fruit was hand-harvested from low-yielding estate vines, many over 40 years old.

Winemaking Process

The grapes were destemmed, crushed, and fermented in small open fermenters with twice-daily hand plunging. Extended maceration on skins enhanced colour, flavour, and tannin structure. The wine was matured for 24 months in 100% French oak barriques (50% new) before a further 12 months in bottle prior to release. No fining or filtration ensured maximum integrity.

Tasting Notes

Deep garnet red. Aromas of cassis, dark plum, bay leaf, and subtle cedar spice. The palate is rich and layered, with concentrated black fruit, earthy complexity, and hints of tobacco. Firm yet silky tannins frame a long, elegant finish, promising excellent cellaring potential.

Food Pairing

Ideal with roasted lamb shoulder, beef fillet with red wine jus, or slow-cooked venison. Also complements hard cheeses like aged cheddar or Manchego.
