The Deen Vat range honours the legacy of Deen De Bortoli, whose passion for winemaking was matched only by his commitment to quality. Vat 9 Cabernet Sauvignon reflects this heritage, delivering a wine of depth, elegance, and character.

Vineyards and Vintage Conditions
Crafted from select parcels in Victoria’s King Valley, the 2019 vintage enjoyed warm, dry conditions, producing small, intensely flavoured berries with excellent tannin ripeness and balance.

Winemaking Process
Traditional fermentation on skins encouraged full colour and flavour extraction. The wine was matured in a combination of French and American oak, imparting subtle spice and vanilla notes while preserving Cabernet’s signature blackcurrant character.

Tasting Notes
Deep crimson in colour, with aromas of cassis, black cherry, and a hint of dried herbs. The palate is structured yet approachable, offering layers of dark fruit, cedar, and fine-grained tannins that lead to a long, satisfying finish.
