Founded in 1928, De Bortoli is a family-owned winery renowned for producing premium cool-climate wines in the Yarra Valley. The Melba Vineyard, one of their most esteemed sites, is dedicated to crafting elegant and structured Cabernet Sauvignon that reflects the region’s finesse.

Vineyards and Vintage Conditions

The Melba Vineyard in Dixons Creek benefits from north-facing slopes and well-drained soils, ideal for Cabernet Sauvignon. The 2018 vintage was warm and dry, producing low yields of intensely flavoured fruit with exceptional concentration and balance.

Winemaking Process

Hand-picked grapes were destemmed and fermented in small open fermenters with gentle plunging to extract colour and tannins. Post-fermentation, the wine matured in French oak barrels (a portion new) for structure, complexity and integration.

Tasting Notes

Deep crimson red. Aromas of blackcurrant, dark cherry, cassis and subtle cedar spice. The palate is rich yet elegant, with dark fruit layers, fine-grained tannins, and hints of tobacco and graphite, finishing long and poised.

Food Pairing

Excellent with grilled or roasted meats such as lamb, beef or venison. Also pairs well with hearty stews, aged hard cheeses or dishes with rosemary and thyme.
