The fruit for this sparkling wine comes from select Adelaide Hills vineyards, where cool nights and elevated sites preserve natural acidity and aromatic precision. Winemaking Process
Pinot Noir grapes were hand-harvested and whole-pressed to gently extract colour and flavour. Primary fermentation occurred in stainless steel to retain fruit purity, followed by secondary fermentation in the bottle using the traditional method. Extended lees ageing adds richness, creaminess, and delicate autolytic character.

Pale salmon-pink in colour, with a fine persistent mousse. Aromas of wild strawberry, red cherry, and floral notes are complemented by subtle toasty nuances.
