Hollick Estates is a boutique winery located on the famed terra rossa soils of the Coonawarra region in South Australia. Founded in the 1970s, Hollick has built its reputation on vineyard‑focused wines that reflect the unique soil, climate, and winemaking craftsmanship of this prestigious region. The Bard range is their more accessible label, offering wines designed for flavour, drinkability, and regional character.

Vineyards & Vintage Conditions

The fruit for this Sparkling Merlot was sourced from Hollick's estate vineyards in Coonawarra. The 2022 vintage experienced generous warmth with clear daytime sun, balanced by cooler nights, which allowed Merlot grapes to ripen fully while retaining freshness and crisp varietal integrity. Vineyards in Coonawarra are planted on terra rossa soil over limestone, providing good drainage and contributing to the wine’s structure and intensity.

Winemaking

Crafted in the traditional method, the base wine underwent secondary fermentation in bottle, capturing fine, persistent bubbles. The wine was matured in oak barrels for 18 months prior to re-fermentation, adding complexity and depth. Post-fermentation, it was liqueured to a predetermined sweetness, enhancing its fruit-forward profile. The result is a sparkling red wine that combines the richness of Merlot with the effervescence of traditional sparkling methods.

• Appearance: Deep ruby red with a vibrant purple hue, showcasing an explosion of bubbles.
  

• Aroma: Fresh aromas of ripe blackberries and cherries, enhanced by subtle chocolate and mocha notes.
  

• Palate: Lively flavours of cherry cola, briar fruit, and dark currants, complemented by underlying oak nuances and soft tannins. The finish is smooth and lingering.
  

• Cellaring Potential: This wine is designed for enjoyment upon release but can be cellared for up to 5 years to develop richer fruitcake characteristics.

Ideal with festive feasts, from glazed ham to BBQ prawns. It also pairs beautifully with rich cheeses or can be enjoyed chilled on its own during warm summer days.
