Hollick Estates is a boutique winery based in Coonawarra, planted in 1975. Known for growing premium estate fruit on renowned terra-rossa soils, Hollick crafts wines that emphasise place, balance and flavour. The Bard is their approachable line, offering elegance and freshness in a white wine style that reflects cool-climate Chardonnay from the region.

Vineyards & Vintage Conditions

The 2024 vintage benefited from favourable climatic conditions: cool nights and warm days, giving Chardonnay grapes time to ripen with good flavour while retaining bright acidity. Early harvesting ensured the delicate aromatics weren't lost, and estate-grown fruit from Hollick’s core vineyards delivered consistency and quality.

Winemaking

Grapes for The Bard Chardonnay are harvested early in the cool morning, then crushed and pressed gently. Fermentation is conducted in stainless steel tanks to preserve freshness and varietal characteristics. Minimal oak influence may be used, but the emphasis is on fruit purity, bright acid structure, and a wine made for both enjoyment now and short-term ageing.

Tasting Notes

• Appearance: Pale straw with a subtle green tinge.
  

• Aroma: Notes of stone fruit (yellow melon, peach), nougat, white chocolate, and a floral jasmine halo. Some barley sugar and citrus pith give extra lift.
  

• Palate: Creamy stone fruit together with melon and a touch of softness, balanced by crisp acidity. The wine has good texture, and it’s very drinkable now but has enough structure to hold for a couple of years.
  

Food Pairing

Pairs beautifully with roasted poultry, buttery seafood (like scallops with cream sauces), mild cheeses or creamy pasta dishes. Also very pleasant on its own as a relaxed evening sipper.
