Hollick Estates is a boutique winery located on the famed terra rossa soils of the Coonawarra region in South Australia. Founded in the 1970s, Hollick has built its reputation on vineyard-focussed wines that reflect the unique soil, climate and winemaking craftsmanship of this prestigious region. The Bard range is their more accessible label, offering wines designed for flavour, drinkability and regional character.

Vineyards & Vintage Conditions

The fruit for this Shiraz was drawn from estate-grown vines in Coonawarra. The 2021 vintage experienced generous warmth with clear daytime sun, balanced by cooler nights, which allows Shiraz to develop both ripe fruit notes and natural acidity. Vineyards in Coonawarra are planted on terra rossa soil over limestone, giving good drainage and contributing to the wine’s structure and intensity.

Winemaking

Grapes were harvested when flavours had matured, then fermented under controlled conditions to maximise varietal expression. Oak is used sparingly to enhance texture, not overpower fruit, allowing primary Shiraz flavours to shine. Tannins are developed via careful extraction to provide structure without harshness.

Tasting Notes

• Appearance: Deep dark red, almost pitch black in hue, with bright red-black tinges.
  

• Aroma: Liquorice, dark plum compote, graphite and white pepper over subtle toasted oak cedar. Some earthy, peppery edge.
  

• Palate: Rich, spicy dark plum and blackberry flavours, backed by firm but ripe tannins and a hint of vanillin oak. Generous finish with good weight and lingering flavour.
  

Food Pairing

Ideal with grilled or roasted red meats (beef, lamb), flavoured slow-cooked dishes (like beef bourguignon or spiced game), or rich stews and aged cheeses. Decanting before drinking helps the complexity unfold.
