In Dreams is a boutique label based in Victoria’s Yarra Valley, renowned for producing small-batch, cool-climate wines that reflect purity and place. With a philosophy focused on minimal intervention and gentle winemaking, the estate has quickly gained recognition for elegant Chardonnay and Pinot Noir that capture the finesse of the region.

Vineyards & Vintage Conditions
The fruit for the 2024 Chardonnay is sourced from select Yarra Valley vineyards planted on elevated sites with clay loam soils over mudstone and shale. The cool climate, with long ripening seasons, mild days, and cool nights, preserves bright acidity while allowing flavours to develop gradually. The 2024 vintage delivered consistent, mild conditions, producing fruit with excellent balance, lifted aromatics, and fine natural acidity.

Winemaking
Hand-harvested grapes were whole-bunch pressed and fermented with wild yeasts to build texture and complexity. The wine was matured in French oak barriques, a portion new, for subtle spice and structure, with partial malolactic fermentation to soften acidity and add creaminess. Lees stirring during maturation enhanced depth and mouthfeel while maintaining a line of freshness.

• Appearance: Pale straw with hints of green.

• Nose: Aromas of white peach, nectarine, and citrus blossom with subtle nutty oak and flinty undertones.

• Palate: Elegant and refined, showing layers of stone fruit, lemon curd, and grapefruit zest. A creamy mid-palate is balanced by taut acidity, finishing long, mineral, and precise.
