In Dreams is a boutique wine project shaped by the winemaking talents of Nina Stocker and Callie Jemmeson. Their journey—spanning the Yarra Valley, Barolo, Rhône, California, and beyond—has culminated in a uniquely expressive Yarra Valley Pinot Noir that balances refinement with vibrancy.

Vineyards and Vintage Conditions
The 2024 Pinot Noir draws from high-altitude sites across the Upper and Lower Yarra Valley, including Seville East, St Andrews, Healesville, Coldstream, and Yarra Glen. These vineyards, set on red volcanic and grey clay loams over mudstone, delivered fruit of notable purity even after a wet, challenging season. Warm, early-season rains were balanced by diligent vineyard care, resulting in optimal ripeness and freshness.

Winemaking Process
Fermented with 95% destemmed fruit and 5% whole bunches, the wine spent 12 days in open-top fermenters with gentle extraction. Maturation occurred in French oak, about 15% of which was new—providing elegant support without dominating the fruit.

Tasting Notes
Bright ruby in the glass, it offers lifted aromas of cranberry, strawberry, thyme, rhubarb, hibiscus, and orange peel. The palate is light-bodied yet precise, framed by juicy acidity and silky tannins. Notes of maraschino cherry, pomegranate, and a delicate, refreshing bitterness add depth. This is a wine of tension, clarity, and charming finesse.

An excellent match for dishes like roast quail, duck breast, mushroom risotto, or anything earthy and elegant. Its vibrancy also complements mildly spiced Asian fare and seasoned poultry.
