Winery Overview
Minimum Wines is an organic and natural wine producer focused on minimal intervention. Using organic grapes, wild fermentation and no additives, the wines are made to express energy, texture and natural character.
Region and Vintage Conditions
The 2022 vintage supported bright fruit expression and balanced acidity, well suited to lighter, fresher red styles.

A blend of Sangiovese, Merlot, Mataro, Grenache and Syrah, selected for lift, freshness and layered fruit character.
Winemaking
All components are wild fermented in small batches, mostly on full skins, with Mataro direct pressed. Fermented across stainless steel and open vats, followed by malolactic fermentation in aged 300L barrels. Aged for 10 months in barrel, then blended and matured for a further 14 months. Bottled and aged for 7 months before release. Unfiltered.
Tasting Notes
Appearance: Bright ruby red.
Aroma: Sour cherry, raspberry and lifted red fruit.
Palate: Light, juicy and vibrant with red berries, rhubarb and soft texture.
Finish: Fresh and lively with a clean, fruit-driven finish.
